Urchin’s philosophy is to give their guests a unique seafood experience, celebrating the very best of local and international product with beautifully crafted raw dishes. Chef Steven Skelly began his career in the time honoured position as a dishwasher, being called into the kitchen when the brigade was short one night. This quickly became a trend and he found himself in the kitchen most nights after school! Twenty years on and he is still in the kitchen every night.
